Everyone knows that every kitchen appliance, every fixture has its own specific task. But if the purpose of the pan, the pan is quite obvious, then the idea of more specific devices is much worse. It's time to deal with such a device as a mantovarka.

Usually mantnitsa looks like a pan, consisting of several tiers.
Water is poured into the bottom, and all the other “floors” are used for laying products. The design is necessarily made collapsible, and on the first tier there is a trellised bottom, about the same as in a colander. The middle of all tiers is equipped with a special round hole that allows you to support the movement of steam throughout the volume. Therefore, wherever the dish is placed, it will be cooked evenly and at the same time with food on other levels.
What is different from the double boiler?
It is very important to know another point - what are the differences between a mantovark and a double boiler. It has long been established that steaming makes dishes healthier than cooking, frying or stewing. If people decide to make their diet as full as possible, they need to use a steamer. It is much more functional and versatile. When comparing two devices, the difference between them becomes immediately clear: the pan in mantyshnitsah more than steamers, and tiers in them, too, more.
Practical differences directly when working with them are almost none. The stores are much more steam cookers than mantovarok. Replacing them with each other is not difficult. But in mantnitsa, any dish contains more water than on a regular steam bath.
Therefore, such a device is best suited for loving manti or dumplings, and for those who need to quickly feed a large family.
Kinds
A small household mantyshnitsa sometimes turns out to be just a pan with metal mesh inserts. But the most typical solution is still the assembly of a number of pans-pallets. They are tightly placed one on top of the other, and the last one at the top is covered with a tight lid. Small options are calculated on 3 l of liquid. But in a large mantovarku can fit 10 - 12 liters of water.

Increased displacement increases the time it takes for the water to boil over. Therefore, the preparation of the product without topping up the liquid may take longer. But the volume of the prepared dishes depends not so much on the displacement as on the width and height.
The simplest designs are equipped with only one tier. More sophisticated devices, especially those of professional class, range from 2 to 5. The outer diameter is 24 to 28 cm. The vast majority of mantyshnits are made from aluminum alloys or stainless steel. The top cover can do and metal, and transparent (based on heat-resistant glass).
Quite often plastic is used to cover pens. This allows you to take heated kitchen utensils without tacks, towels. The same problem can be solved with the help of wooden handles. Separate conversation deserve products made of bamboo. The bottom and the top are made of woven straw.
Such a construction (in Chinese “jenlon”, that is, “steam basket”) was invented several thousand years ago. It has not yet been established to the end, when and where the first samples of the “genlon” precisely appeared. The reason is the low preservation of wood compared with ceramics, natural stone and bronze. Bamboo steamers are used in almost all Chinese families, and so far they are made strictly by hand. The only change was the active use of metal wire.
Since bamboo wood absorbs all sorts of smells, it is necessary to apply special measures. Chinese tradition involves the use of banana leaves. In our country, instead of them, grape leaves or parchment paper are laid on the bottom. In small cooking baskets, the bottom diameter is 0.15 m. The food prepared in such dishes is usually served there.
Most small cooking baskets in our country have from 2 to 4 tiers. But in China you can find samples with 10 or more levels.
Bamboo ware is good for its absolute environmental safety and the fact that it can cook food without consuming electrical energy. You can use such a device and on the gas stove, and even on the fire. But we must take care that the products are not in contact with the basket directly.
To do this, make a layer of paper or other material. Washing the bamboo basket is not difficult - it is simply rinsed under the tap. The cost of such utensils in China is many times less than in Russia. And yet, in most cases, the best choice would be an electric mantovarka. Programmable devices have internal burners, able to work on a clear schedule.
Most electric cookers are equipped with thermostats. Such devices allow you to not fear the occurrence of fire, if all the water boils away. Returning to the material, it is necessary to mention enameled mannavarki. In fully working condition, they work no worse than conventional stainless steel counterparts. However, the enamel can be destroyed when heated, and this greatly limits the relevance of enamelled products.
Selection rules
For an induction cooker, it is better to choose, of course, a stainless steel manta cooker. Bamboo products, no matter how good they are by themselves, in this case will definitely not work. BUT selecting dishes for glass-ceramic plates, it is necessary to abandon all products with protruding parts. The next important step in the selection is the distinction between classical and electric models. The first is more pleasant in aesthetic terms, but the second is more comfortable when working.
Of great importance is the capacity of the structure and the number of tiers. Here you can only focus on your own needs.
Important: the best choice would be mantys with a multi-layered, heat-distributing bottom. Aluminum modifications are cheaper than steel, but they are not suitable for induction cookers and it is more difficult to care for them. Dark spots also appear on aluminum.
Operation Tips
As already mentioned, in mantnitsah you can cook quite different dishes. But the first time, at least, it is worth using them for the most basic task - cooking manti. Regardless of the origin of semi-finished products (home or store), the cooking time will be a maximum of 35 - 40 minutes. It is best to use the steam technique, because in the water to make everything qualitatively rarely who succeeds. Electrical models are usually accompanied by instructions explaining all the nuances of use.
And when working with a classic mantys one, do the following:
- remove all tiers and lubricate them with sunflower oil;
- lay out manty with a step of 1 - 2 cm;
- check if steam passages remain;
- achieve strong boiling and abundant steam;
- put tiers in place.
Cooking time of coats in this technique will be ½ hour. Important: universal mantovarki can be used for making juice. To this end, instead of shelves put a cone-shaped lattice. Regardless of the work to be done, you must take precautions so as not to get burned.
